White Chocolate Cranberry Cookies

Yield: 24 cookies

Ingredients:

  • 2 sticks unsalted butter, softened
  • ½ cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 cups old fashioned rolled oats
  • 3/4 cup dried cranberries
  • 8 oz. White Chocolate Blossoms, chopped

 

Instructions:

  1. In a large bowl, use electric mixer to cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 4 to 5 minutes. Add eggs and vanilla extract then mix again until combined.
  2. In a small bowl, whisk together flour, cinnamon, baking soda and salt. Add dry ingredients to wet ingredients and mix on low speed until fully incorporated, about 2 minutes. Add in oats, dried cranberries and White Blossoms, mixing until just combined.
  3. Cover dough and chill for 1 hour.
  4. Preheat the oven to 375º F. Line two baking sheets with parchment paper.
  5. Use a cookie scoop to form 2 inch dough balls and place them 3 inches apart on a lined baking sheet.
  6. Bake for 9-13 minutes or until lightly brown around the edges. Allow to rest on the baking sheet for at least 10 minutes before moving to a cooling rack.
