Double Chocolate Zucchini Muffins


  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 1/2 cups all-purpose flour
  • 1/3 cup Sarris Cocoa Powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 cups grated zucchini
  • 12 oz. Sarris Dark Chocolate



  1. Preheat oven to 350º. Lightly spray muffin tin with non-stick cooking spray.
  2. In a large bowl, beat the butter, brown sugar and white sugar until creamy. Add egg and vanilla and mix well. Mix in flour, Sarris Cocoa Powder, baking soda, baking powder, salt and cinnamon; stir until combined. Fold in zucchini then add Sarris Dark Chocolate. Drop large spoonfuls of dough into muffin tin.
  3. Bake for 18-20 minutes, then let the cookies cool for 5-10 minutes in muffin tin before removing them to wire racks.
